Our Carte Blanche tasting concept invites guests on a culinary journey guided by creativity and seasonality, offering a unique fine dining experience in Malta.

Each dish is crafted with the freshest seasonal produce from The Xara Gardens and trusted local suppliers, reflecting a narrative designed to excite and satisfy. Menu can be adapted for dietary requirements, allergies and intolerances while preserving the experience. Inspired by the Odyssey and led by Executive Chef Davide Marcon, each course forms part of a story that unfolds throughout the meal. THE ODYSSEY: FROM OGYGIA TO ITHACA

Inspired by Odysseus’ journey across the Mediterranean, this path tells a story of discovery, belonging and return. It is both a physical and cultural journey, shaped by encounters with ingredients, traditions and customs that have defined Mediterranean food for centuries.

Malta becomes Ogygia, an island of permanence and transformation. Here, as in Calypso’s cave, I experience a time of deep immersion, observing, absorbing and reinterpreting an ancient and layered gastronomic culture. Each ingredient, technique and experience contributes to an evolving culinary language, where every present moment carries traces of the past.

Nostos is not simply the act of going home, but the recognition of oneself through the journey. My Ithaca is not a fixed place, but a synthesis of experiences, memories and influences collected along the way.

This menu reflects that passage, where Maltese tradition meets a personal, traveller’s vision. Each dish is a step, balancing discovery and memory, where I gradually redefine the meaning of return.
